In any case, here's the scoop...

'Organic, easy, and delicious' are not just a marketing gimmick. It's the truth. 

The ingredients in my Sun Basket delivery were sourced from local, organic farms...just like I would choose at the store. The meats and seafood were wild-caught and organic...just like I would choose at the store.

The recipes were easy to follow and were on the table in less than an hour. These were tasty, filling meals that I could get onto plates in a reasonable amount of time. Perfect for a busy school night. My only complaint: I didn't have leftovers. If I were to make these dishes, buying the ingredients at the store, I always pick up enough to have dinner plus lunches the next day. The meals were delicious. Truly delectable. After each of the meals, Jake asked me, dubiously, "This is really from a kit?!"

Quick Pickled Red Onions and Radishes

If you've been reading my blog for even a short amount of time, you probably know how much I love to pickle things. I was just telling a friend you can pickle - with vinegar - or you can ferment - with salt - for similar delicious effect. The latter has digestive benefits and I love to do that, but when I need that pop of sour flavor quickly, I whip up quick pickles that are ready in as little as a day or two. I've Pickled Blueberries , Pickled Asparagus , Pickled Cranberries , Pickled Pumpkin , and even Pickled Chard Stems ! This I did last night for an upcoming recipe challenge that requires I include radishes. Ummmm...of course I'm pickling them!
